摘要:目的:利用一种基于游戏化设计的膳食调查工具探讨情绪性进食行为与膳食模式之间的关联,并评估游戏化膳食调查工具在儿童青少年营养状况研究中的应用潜力,为饮食行为干预提供科学依据。方法:研究在深圳市某中学开展,招募6-18岁的儿童青少年,通过自助餐场景模拟的游戏化膳食调查工具收集膳食摄入数据。情绪性进食行为通过情绪性进食量表评估,利用主成分分析提取膳食模式并命名为低能量密度、主食-蔬菜、高碳水低蛋白、肉蛋高蛋白及水产品-蛋乳五种模式。统计分析采用Wilcoxon秩和检验、多元线性回归及亚组分析,调整性别和年龄等混杂因素,进一步探讨不同特征群体中的情绪性进食与膳食模式的关系。结果:最终纳入855名有效样本,结果表明情绪性进食评分与低能量密度膳食模式显著负相关(调整变量后:β = -1.70,95% CI: -2.97至-0.43)。亚组分析显示,女性中情绪性进食行为与低能量密度膳食模式和水产品-蛋乳膳食模式的负相关显著(分别为β = -2.42和β = -1.58),而男性未呈现类似关联。此外,不同年龄组和不同BMI Z评分的儿童青少年情绪性进食行为与膳食模式之间无显著差异。结论:本研究验证了游戏化膳食调查工具在评估儿童青少年膳食行为中的有效性,特别是在捕捉不良膳食倾向方面具有优势。研究结果为设计针对性营养干预和优化膳食调查工具提供了科学依据,并展示了数字化工具在未来大规模人群营养研究中的应用潜力。
Abstract: Purpose: To examine the association between emotional eating behaviors and dietary patterns, and to evaluate the potential of a gamified dietary assessment tool for studying nutritional status among children and adolescents, providing scientific support for dietary behavior interventions. Methods: Participants aged 6–18 years from a middle school in Shenzhen were recruited. Dietary intake data were collected using a buffet-style gamified dietary tool, and emotional eating behaviors were assessed via a dimension of the Intuitive Eating Scale. Five dietary patterns—low-energy-density, staple-vegetable, high-carbohydrate-low-protein, meat-egg-high-protein, and seafood-egg-dairy—were identified through principal component analysis. Wilcoxon rank-sum test, multiple linear regression, and subgroup analyses were conducted, adjusting for gender, age, and other confounders to explore the relationships in specific subgroups. Results: 855 valid samples were included. Emotional eating scores were significantly negatively associated with the low-energy-density dietary pattern (adjusted β = -1.70, 95% CI: -2.97 to -0.43). Subgroup analysis revealed stronger negative associations in females between emotional eating and the low-energy-density (β = -2.42) and seafood-egg-dairy patterns (β = -1.58), while no significant relationships were observed in males. Besides, age-based and BMI-Z-Scores-based analysis showed no significant differences. Conclusions: The gamified dietary assessment tool demonstrated strong validity in capturing dietary behavior, particularly unhealthy tendencies, among children and adolescents. Emotional eating significantly influenced dietary choices, with a stronger impact observed in females. These findings provide scientific insights for targeted nutritional interventions and showcase the potential of digital tools in large-scale nutritional research.
